Boureki is a delicious traditional food that you tasted and cannot forget from your last visit in Crete, with basic ingredients well-seasoned potatoes, zucchini, tomatoes and feta cheese.

You will need:
6 potatoes cut into very thin slices
6 cucumbers cut into very thin slices
700 g of fresh mizithra or ricotta cheese
300 g of feta cheese
4 tbsp. flour
4 big eggs
3/4 cup of organic cretan olive oil
200 g greek yogurt drained
1 large tomato ripe chopped
4 tbsp. fresh chopped mint
salt
pepper
The vegetables should be cut into almost transparent slices. Put them in a large bowl with salt and pepper. Add the cheese trimmings and the flour and mix it all together. Pour the mix in one oiled pyrex baking dish and make one layer with the chopped tomatoes and mint.
In a bowl beat the eggs, add the yogurt and oil and pour over the materials. Cover with foil and bake for an hour at 180ºC in a well preheated oven. Leave in uncovered and bake for another 30 ' until the surface is brown.
*During summer, boureki is served cold or at room temperature. But hot also is also irresistible.
